Fast and easy breakfast to last you until lunch

You need to eat a good breakfast if you want to prevent that from happening! This is a fast and easy breakfast that will keep you energized until lunch, all because of the 16 grams of protein it packs! You can prepare all the ingredients the night before, then just throw everything together.

Ingredients

1 small onion, finely chopped (you can also use green onion)
1 chopped red chilli (omit if you don’t like spicy food)
1 pat of butter
4 eggs, well beaten
1 tbsp of milk
1 handful of diced tomatoes
3 coriander leaves, chopped
salt and pepper to taste
Directions

Fry the onion and chilli, if using, in the butter. Cook until softened. Stir in the beaten eggs and milk. When the eggs are nearly cooked all the way through, add the tomatoes and coriander leaves. Cook a couple of minutes more then season with salt and pepper. Serve with toast.
